Slow Cooker Honey Garlic Chicken and Veggies

Quick, easy and simple to throw into the slow cooker, this chicken is super moist and tastes like you spent more than the 10 minutes to put it together.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 6 carrots, peeled and cut
  • 1/2 cup coconut aminos
  • 1/2 cup honey
  • 1/4 cup natural ketchup
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp pepper

Instructions

  1. In a large bowl, combine coconut aminos, honey, ketchup, garlic, basil, oregano, red pepper flakes and pepper.
  2. In the slow-cooker, place chicken thighs, carrots and coconut aminos mixture. Cover and cook on Low for 7-8 hours or High for 3-4 hours. If adding other veggies that require less cooking time, add them in the last 30 minutes of cooking time.
  3. Serve chicken immediately with veggies and a starch like potatoes, rice or quinoa.
