Tomato, Corn & Black Bean Salad

This easy side salad (or even use as a dip) incorporates the taste of summer in one simple dish.

Ingredients

  • 3 ears of corn boiled for 1 minute
  • 2 ½ cups black beans drained, rinsed, and cooked
  • 8 oz. cherry tomatoes halved
  • ½ cup red onion diced
  • ½ cup basil leaves chopped
  • 3 ½ tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • salt & pepper to taste

Instructions

  1. Slice the corn kernels off the cobs and mix with the beans, sliced tomatoes, and red onions in a large bowl.
  2. In a small bowl whisk together the basil, vinegar, oil, garlic, salt & pepper.
  3. Pour the dressing over the salad mixture and gently mix together. Garnish with fresh basil if desired.
