Elderberry syrup

The wonders of elderberry syrup are amazing, it helps fight that nasty cold, flu or virus. A search for allergy-friendly elderberries makes me feel a bit more confident serving this in our home.

Ingredients

  • 3/4 cup dried elderberries, allergy-friendly*
  • 4 cups filtered water
  • 1 cinnamon stick
  • 1 tbsp fresh ginger or 1 tsp dried ginger
  • honey to taste

Instructions

  1. Bring elderberries, water, cinnamon stick and ginger to a boil.
  2. Reduce heat, cover and simmer for about 30 minutes.
  3. Allow to cool, then drain the liquid with a fine mesh sieve; press down on the elderberries to remove as much liquid as possible.
  4. Pour into an ice cub tray to freeze, or refrigerate and use within 30 days.
  5. Add one cube to hot water, and honey to taste.
