Authentic Foods
With the need to bake allergen-friendly for over a decade, I discovered the key to creating treats as close to traditional baking as possible was the flour blend. What I learned early on was that Authentic Foods was the flour I needed. This discovery is credited to Cybele Pascal, food allergy baker and chef extraordinaire. In one of Cybele’s several cookbooks, The Allergen-Free Baker’s Handbook, Cybele describes Authentic Foods superfine brown rice flour as “...the Cadillac, or cashmere, of brown rice flours and is worth its weight in gold.” I still use Authentic Foods flours today and find they bake well every time.
